Is it still possible to talk about alternative production, sustainable food, short chain, Km0, collective and cooperative production, urban agriculture? While those less entitled to do so often build their commercial success on these words, others have always been building infrastructures and networks from below, trying in different ways to be truly sustainable. This round table brings together some of them, we call on researchers and experts to problematise the concept of sustainability.
The workshop is part of the research activity of the Milano Bicocca University led by Gianmarco Navarini, and will attempt to map the networks, practices and stakes behind the challenge of sustainable eating in a big city like Milan. The workshop is open to all those active in the area, to discuss together the urban ecosystem regarding the production, distribution and serving of food, inviting restaurateurs, agricultural producers and Milanese actors involved in the culture of sustainable food. A workshop aimed at those interested in discussing what it means to produce and serve sustainable food in Milan today.
